Ceremonial matcha

Ceremonial matcha is the first spring harvest: young leaves shaded before picking, stripped of stems and veins, and stone-ground to a powder finer than 10 microns. That is where the bright green, the natural sweetness and the umami without astringency come from. Drink it the traditional way — 2 g to 60–70 ml of water at about 75 °C, whisked with a chasen into a dense foam. Available in 100 g and 200 g, and in sets with a bowl and whisk.
