This matcha hot chocolate is made with white chocolate. The chocolate brings sweetness and body, the matcha a green colour and a distinct, slightly bitter taste that balances the sweetness. No sugar is needed — white chocolate brings plenty of its own.
Two things decide the result. Whisk the matcha in a little water first, just as for our hot matcha latte — stirred straight into milk it would clump. And do not boil the milk: 60–65 °C is enough for finely chopped chocolate to melt in a minute. Culinary matcha is all you need here — its stronger taste cuts through the chocolate, where delicate ceremonial matcha would get lost.
White chocolate adds practically no caffeine, as it contains cocoa butter but no cocoa mass. The caffeine comes from the matcha: each mug holds 2 g, about 60–70 mg — the same as a matcha latte made with 2 g. Worth remembering in the evening and when serving children.
Ingredients
400 ml milk (whole cow’s milk or barista oat milk)
80 g white chocolate from a bar, finely chopped (cocoa butter in the ingredients, not vegetable fat)
4 g culinary matcha
60 ml water at 80 °C
Preparation
1
Chop the chocolate as finely as you can — fine shavings melt in warm milk within a minute.
2
Sift the matcha into a bowl or a wide mug.
3
Pour over 60 ml of water at 80 °C and whisk with a chasen in a “W” until every lump is gone — 15–20 seconds.
4
Heat the milk in a saucepan to 60–65 °C: hot and just steaming, with no bubbles at the edges yet. Do not let it boil.
5
Turn the heat to the lowest setting, add the chocolate and stir with a whisk until it has fully melted — about a minute.
6
Take the pan off the heat, pour in the whisked matcha and stir for another half minute, until the colour is even and a froth forms on top.
7
Pour into two mugs and serve at once. If you like, dust the top with a little matcha through a sieve.
