Matcha lemonade with lime and mint
Refreshing, with a slightly tart taste — matcha instead of the caffeine in cola.

Matcha and citrus are a combination that works better than you might think. The acidity of the lime not only cuts through the herbal flavour of the matcha — it also stabilises its green colour, so the lemonade won’t turn brown after an hour in the fridge, as is often the case with matcha mixed with water on its own.
The drink is distinctly refreshing and contains about a third of the caffeine found in a cup of coffee.
Ingredients
3 g culinary matcha
80 ml lukewarm water for whisking
60 ml freshly squeezed lime juice (about 2 limes)
2 tbsp agave syrup or cane sugar
400 ml cold sparkling water
a few sprigs fresh mint
to fill the jug ice
Preparation
1
Sift the matcha into a small bowl, pour in 80 ml of lukewarm water and whisk with a chasen or frother until smooth. Lukewarm water is fine — we’re not brewing anything here, and cooler water helps preserve the colour better.
2
Muddle the mint with the syrup in a jug, pressing down on the leaves with a spoon. The aim is to release the essential oils, not to tear the leaves — chopped mint will turn bitter.
3
Pour in the lime juice and mix it with the syrup.
4
Add the whisked matcha and give it a stir.
5
Fill the jug with ice, pour in some sparkling water and give it a gentle stir once, so as not to lose the bubbles.
6
Serve straight away, with a slice of lime and a sprig of mint. If the lemonade has been standing for a while, give it a stir again — the matcha naturally settles at the bottom.
